How to cook paksiw:

Ingredients:

4 slices of fish (Or whatever you want aside from fish. Wait, may iba pa bang pinapaksiw? Oh yeah, lechon paksiw! But I cooked fish. So..)
1 cup of chopped onions
1 cup of chopped garlic
1 cup of chopped ginger
1 cup water
A dab of salt (or as desired)
1/8 cup of pepper granules
1 cup of vinegar
5 heaping cups of self-assurance
7 cups of determination
10 cups of lurve


1. Drink the 7 cups of determination.

2. Ask. If your mother and/or husband are awesome cooks, like mine are, ask them what to do. Or you can always google.

3. If frozen, defrost the fish. Duh.

4. Dump the water, garlic, onions, ginger, fish, salt and vinegar to the pan. Tak-pan. (Get it? Tak-pan? Takpan ang pan? No? Oh, well.)

5. Let it simmer. This is also about the time when you need to slurp your 5 heaping cups of self-assurance. Also, pray.

6. When you see the little bubbles it means the vinegar and water are boiling. Pahinaan ang apoy.

7. Pray. Again.

8. Once the fish looks cooked, I mean when it looks different than when you first put it into the pan (double duh) then it's already done!

9. Dab with 10 cups of lurve.

10. Serve.

What do you mean where's the picture? Of course I don't have a picture or else you will forever be discouraged to cook paksiw! Anyway, I'm really good at making pasta and sandwiches. Perhaps I can post those next time complete with pictures.

Random Day Happiness

Today is a good day, just like most days. Dimple (Mr. L), and I went out on his motorcycle this morning, he drove to Binondo for an item issue of something that we ordered online. We often piss each other off on the road because he expects me to navigate with Googlebelle (that's what I call the voice on Google Maps) when I expect him to already know the way. Also, I get defensive when I panic haha! Today, however, Googlebelle cooperated with me and I found it easy and fun to navigate. :) I especially liked it when we were able to make all the right turns. Nakakatuwa. My favorite, though, is when the map took us to streets we've never been in before. Small roads that didn't feel like Metro Manila at all! It was amazing.

It also rained very hard several times while we were outside, which wasn't that much of a bother because we both like the rain. :) We were like school kids giggling under our rain gears. One time pa nga idinaan niya talaga sa ilalim ng flyover para daw maulanan pa kami ng todo. Ang yabang kasi naka-raincoat deadma na kung madumi 'yung tubig kakaloka hahaha!

Although we had to cancel with some friends because of another appointment later today, we were able to tick all the items on our to-do list so yayy! I am praying for more days like this one.

As of this writing, I am waiting for the washing machine to finish the first batch of my laundry. Sounds so domesticated when in reality I have only been married for 11 days. Haha! 11 days! I am still on a high from the wedding day (hence, all the exclamation points lelz). Honestly, I miss the preps; the craziness, the impossible schedule, the last minute errands. It’s funny because a few months into the wedding, I couldn’t wait for it to be over and now I’m pining for it.

Lately, I've been stalking our guests’ social media pages looking at photos, videos and posts about our wedding day. It makes me happy knowing that our family and friends had fun! That was what Dimple (that's Mr. L) and I wanted from the start - for everyone to have fun. By the way, the novelty of typing “husband” instead of “boyfriend” makes me kilig hahaha!

I’m at that point in my life where I want to savor every minute, feel every moment and, if only it’s possible, put them in a bottle where I can open them in the future and experience them over and over. That’s why I am writing now, so I can have something someday that will give me a glimpse of what my life is like right now because “right now” is really awesome.

I know it won’t always be this awesome but I feel that as long as Dimple and I have each other’s backs, as long as lagi kaming magkakampi, I know kakayanin namin lahat. I plan to take my vow to heart and I hope that everything will be well for us. It would be interesting to look back on this post one day to see what the 11-day old wife thought about marriage tee-hee!
